Pop Up Hamilton at LIUNA Station

LIUNA Station was the secret location for Pop Up Hamilton’s Ultimate Pop Up. We’re so glad everything went well! For those that missed this great event, check out what was served.



Course 1: (Inniskillin 2012 Riesling reserve ) Leo’s Dish: Chicken Terrine with arugula, crisp apple & a curried mango sauce


Course 2: (Pelee Island Lighthouse Sauvignon Blanc) Jonny’s dish: Foie gras duck confit with caramelized root vegetable stuffing and white wine pearl barley, garnished with blue oyster mushroom


Course 3: (2010 Pillitteri Estate Winery Cabernet Franc) Robert’s Dish:
Cider braised pork belly with roasted beet trio, gratin potato and 2010 Pillitteri Estate Winery Cabernet Franc jus and peach preserves


Course 4: (2011 Creekside Estate Winery Syrah) Ken’s Dish: Rosemary molasses rubbed local wagyu (Kobe) short-ribs purple sweet potato Gallette, Shanghai Bok Choy, Fried Serrano ham with East Coast Partridge Berry Bourbon reduction


Course 5: (2010 Chateau Des Charmes “Earth & Sky” Pinot Noir) Manny’s Dish: maple glazed pork belly, fennel and rhubarb kimchee, pomme purée, ginger scallion

Course 6: (Palatine Hills Estate Winery Gewürztraminer Ice Wine) Nicole & Josie’s Dish:
Vanilla Spiced Pear Cake with Rhubarb Compote and Palatine Hills Estate Winery Gewurztraminer Ice Wine Truffle
